A few weeks ago, we went camping with some friends. This was high-comfort camping, the kind where you drive in, so not really roughing it all that much. We had a lovely group campground at William O’Brien State Park just north of Stillwater, and we had a great time. Our friend Jess was in charge of breakfast on our first morning – and I don’t know if it was just the fresh air, but that was about the best breakfast ever. She made eggs (using egg beaters, thank you very much, SO much easier than trying to keep a dozen eggs from breaking in the cooler) and brought along a cast iron skillet that we used on the grate over the fire to cook the most amazing sausage and bacon.
Paired with some fresh fruit and skillet potatoes, and we were happy campers indeed.
